What Makes It Special?
Beef quality is graded by marbling — the amount of fat within the muscle between the 12th and 13th ribs. Our Wagyu (also called WANGUS) scores above USDA Prime on the Japanese Beef Marbling Score (BMS), which ranges from 1 to 12. For reference, a score of 2 equals USDA Choice, and 12 is the highest marbling possible. Our Wagyu scores 9+, meaning it has exceptional marbling for unbeatable tenderness and flavor.
