All beef grading is based on marbling or intramuscular fat between the 12th and 13th rib.
Our American Wagyu (WANGUS) beef grades above USDA Prime. To represent the marbling present in our beef, we use the Japanese Beef Marbling Score or BMS. BMS measures marbling on a scale from 1 to 12 with a 2 representing USDA Choice and a 12 being the highest level of marbling possible. Our American Wagyu scores above USDA Prime. Rated at 9+ on the Japanese Beef Marbling Score (BMS).
No flavor enhancers, added water, mechanical tenderizing or dyes like most meat in the stores, just delicious naturally raised meat with no antibiotics or hormones the way meat should be!
