Also called country ribs, and blade end country spare ribs, these are cut from the blade end of the pork loin, next to the shoulder. These cuts are tender and juicy because of the high fat content in this part of the pig.

I always thought I didn’t really care for pork, I would only eat bacon on a semi regular basis and have other cuts of pork a couple of times a year; I never considered myself a pork person.
