Beef tendon is the connective tissue that connects muscles to the bone. It is primarily made up of collagen and elastin (great for joint, skin and gut health). You are getting almost all protein when you eat beef tendon with a tiny amount of fat.
Beef tendons are tough and fibrous but with slow cooking become very tender, which makes them the perfect addition to soups and stews!
