With a taste between liver and heart, these would be great with onions and/or mushrooms. Organ meat is an acquired taste, but you do get the best quality. Sizes vary and they are affordable, easy to process (with some fat that can be used with or saved for later) not terrible to eat. Kidneys are not fatty itself, so if you are in the market for lean, or want to try organ meat, this is a good start.
