Oxtail is the culinary name for the tail of cattle. An oxtail typically weighs 1.5-2lbs and is skinned and cut into short lengths for sale. Oxtail is often used in soups or stews as any meat is very tough so long, slow cooking is beneficial; in addition, there is a lot of collagen that seeps out during cooking (so good for you!)
