Brisket is a cut of meat from the breast or lower chest of beef or veal. The brisket muscles include the superficial and deep pectorals which consists of a lot of connective tissue. It is important to cook this cut of meat correctly to tenderize the connective tissue. Approximately 5 lbs.
Our beef is dry aged for 2 weeks.
